Mango Coconut Overnight Quinoa Jars

Ingredients

  • 1/2 cup cooked quinoa
  • 1/4 cup chia seeds
  • 1/4 cup hemp hearts
  •  2 tsp of maple syrup
  • Shake of cinnamon
  • 1 1/2 cups coconut milk (or use unsweetened vanilla almond/soy milk or regular milk)
  • 2 cups sliced mango or strawberries or your favourite fruit sliced
  • Options: add unsweetened desiccated coconut, a sprinkle of raisins or other dried fruit to enhance your overnight jar.

Instructions

Add all ingredients (minus the fruit) to one large bowl and stir together. Find two jam jars. Add a few heaping spoonfuls of the quinoa to the bottom of the jars, add a layer of the sliced fruit, repeat ending with the quinoa. Tighten the lid and place in fridge overnight. Jars are ready to eat upon waking.
