Pumpkin Muffins

PUMPKIN (chocolate chip) MUFFINSpumpkin choc chip muffins

  • 1 ¼ cups quick oats
  • 1 ¼ cups whole grain flour (spelt, wheat or GF)
  • 3 Tablespoons brown sugar
  • ½ tsp cinnamon
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp  salt
  • 1 egg
  • 1 tin (398) pumpkin (plain, not pumpkin pie filling)
  • ⅓ cup Canola oil
  • 1/2 cup dark chocolate chips (or a wee bit more if desired) (optional)

Directions

Preheat oven to 375°F (190°C). Grease 12 muffin pans.

  1. Combine first 7 dry ingredients in large bowl. Mix well.
  2. Beat egg, pumpkin and oil together in small bowl or mixer until smooth.
  3. Add pumpkin mixture to dry ingredients. Stir just until moistened.
  4. Add chocolate chips if using
  5. Fill prepared pans almost full.
  6. Bake in preheated oven for 15-20 minutes, or until top springs back when lightly touched.
