- 1 cup Quick Oats
- 1 1/2 cups Whole grain flour
- 2 Tablespoons Brown sugar (optional)
- 1 ½ tsp Baking powder
- 1 tsp Baking soda
- ¼ tsp Salt
- 2 Eggs
- 2 cups mashed bananas (about 3)
- ⅓ cup Olive oil
- 25 grams 85% chocolate – chopped into small pieces (optional)
Preheat oven to 375°F (190°C). Grease muffin pan.
Combine first 6 dry ingredients in large bowl. Mix well. Put bananas, eggs and oil in blender or mixer and mix until smooth. Add banana mixture to dry ingredients and stir until just moistened. Add chocolate chunks and stir to combine. Fill prepared muffin pans almost full.
Bake in preheated oven for 15 minutes, or until top springs back when lightly touched.
Makes 12 muffins.
