These are not your normal waffles. They are made from true whole grain brown rice, are loaded with protein (11g per serving) and naturally sweetened with banana and iron-rich molasses. They are great to pack for your next hike, bike ride or cross country ski or feed to your kids for a hardy breakfast or after- school snack. They are great on their own, topped with berries or use as a sandwich and fill with almond butter and a little jam.
- 2 cups cooked brown rice
- 3 eggs
- 1 ripe banana
- 2 tablespoons of molasses
- 2 tablespoons of rice flour
- ½ cup of milk (or almond milk)
- Pinch of salt
- Optional Topping: fresh berries, or berry compote
- natural unsweetened almond or peanut butter
- cream cheese
Heat waffle iron and spray with nonstick cooking spray or baste with melted butter.
Mix all ingredients in blender and add milk slowly to achieve desired thickenss. Batter should be quite thick.
Pour batter into waffle iron, learnly filling the area. Close the lid and wait 3-5 minutes for it to cook. When the waffle is golden brown gently remove from pan using fork.
These are great on their own but you can also add any filling and make a sandwich to eat on the go.
